As a hobby I like to study and analyze fights and fighters in fiction and Demona is an interesting case. I'd have to agree with Greg that she's most likely not as strong as Goliath but more agile. One thing to consider is that while Goliath never defeated her in a fight he also carries a lot of emotional baggage when it comes to her and probably would hold back against her in a fight. (Not to mention Disney standards wouldn't really allow for a really brutal fight involving a woman, even if she was a villain.)
Demona's greatest assets behind her gargoyle strengths lie in the fact that she's far more willing to use weapons both modern and ancient in a fight, and shows proficiency with both. Not to mention she has some skill with magic, not to the level as the Archmage or Magus but enough to make her dangerous.
But the thing that makes her the most dangerous is undoubtedly her sociopathic nature that drives her to attempted genocide. Her functional immortality while a great asset also for the most part makes her reckless. Also she heavily relies on her gargoyle strength and weapons and when deprived of both she performs pretty poorly. As shown in High Noon when she transforms into a human and Elisa is able to handle her with basic hand to hand techniques.
This is another example of why she's a foil to Macbeth. Despite them both being immortal, using high-tech and archaic weaponry, and magic, Macbeth managed to grow as a warrior over the centuries to the point where he could match Goliath in a fight despite being an ordinary human (so to speak). Demona on the other hand has remained reckless, arrogant and foolhardy. As shown in Long Way to Morning despite being younger, stronger and packing some serious heat, Hudson was not only able to hold her off using nothing but his wits and an old sword but she failed to recognize that he was stalling until the dawn.
That's my analysis anyway.
